For our Vive le Printemps menu, we are embracing all things French and Quebecois while highlighting the incredible products sourced from our local farmers. With such a bounty to choose from, we’ve created a menu with options for each course. We know many of you will be pleased to see our Riz au Lait, Côte de Porc, and Escargot returning, just to name a few!

Springtime brings much to be grateful for; from blue skies and longer days, to an abundance of fresh, seasonal ingredients and inspirations. For those who've joined us before, you may notice my affinity for late spring-early summer arrivals – rhubarb, peas, and herbs such as lovage and sweet cicely often make an appearance in our kitchen during this time of year.
About St. Lawrence
A heartfelt homage to Chef/Owner Jean-Christophe (J-C) Poirier’s heritage, formative years in Quebec and early experience in renowned Montréal restaurants, St. Lawrence offers a marriage of classic French cuisine and the gastronomic identity and culture of Les Québécois.

One of the most celebrated restaurants in Canada, St. Lawrence was proudly awarded One Star by the Michelin Guide in 2022. The restaurant received a series of other recognitions this year, including Restaurant of the Year and Best Upscale by the Vancouver Magazine Restaurant Awards, 'Top 6' Placement in Canada’s 100 Best Restaurants 2023, and inclusion on the World’s 50 Best Discovery List.

Originally from Quebec, J-C has been a fixture on the Canadian culinary scene for more than 25 years. Ashley Kurtz
EXECUTIVE CHEF & PARTNER
Armed with classical training earned working in celebrated local kitchens and Michelin-starred restaurants overseas, Ashley embarked on a longstanding, like-minded culinary collaboration with Chef/Owner J-C Poirier years ago and has recently re-joined the team as executive chef and partner. Together, Ashley and Chef J-C are working collaboratively on the next chapter in the story of St. Lawrence.

As a natural leader with experience in Vancouver’s top dining rooms, she demonstrates an acute attention to detail while presiding over the room each night to deliver a flawless guest experience.
David Lawson
SOMMELIER & DIRECTEUR ADJOINT
David began his hospitality career in Canada’s Capital, though the seasoned hospitality veteran has worked at restaurants across the continent. No matter where he travelled, he missed the culture of his home region along the Ontario-Quebec border. David’s passion for lively and energetic wines made by skilled low-intervention winemakers are showcased throughout the wine list and he’s excited to share his expertise, and French-Canadian roots with diners.
